To create a tasty Mexican meal with minimal time and fuss you're better off embracing the blended cuisine and sticking to something simple. Fajitas with chicken or beef are easy to do in the oven and you can even buy handy pre-prepared tortillas and salsa in a kit pack from any good supermarket. Combine that with a side of shop-bought refried beans and a big plate of nachos and you'll have a Mexican feast the whole family can enjoy. Rope the kids in to help you make your own salsa and guacamole if you're feeling adventurous.
